1 cup fresh lemon juice (about 5 lemons) 2 tbs. olive oil 1-1/2 tbs. minced garlic 1/2 tbs. dried oregano 2 lb. skinless, boneless chicken thighs (about 8) Cooking spray 1/4 tsp. salt 1/8 tsp. freshly ground black pepper |

Instructions:

1. Combine lemon juice, olive oil, garlic and oregano in a zip-top plastic bag and mix. Add chicken. Seal and marinate in refrigerator 3 hours or overnight, turning occasionally. 2. Preheat oven to 350°F (or prepare a bbq grill) 3. Remove chicken from bag; discard marinade. Place chicken in a single layer on a broiler pan coated with cooking spray; sprinkle with salt and pepper. Bake at 350° for 45 minutes or until done. |
