Baked Rolled Enchiladas

Ingredients:
1 lb. lean ground beef
1-2 cans of red enchilada sauce
1 onion, chopped
Grated sharp cheddar cheese
Corn tortillas
Oil
Chopped lettuce and tomato

Instructions:
1. Pour about 1/4 inch of oil into a small frying pan. Heat until a tortilla dipped into it sizzles. Fry each corn tortilla for about 3-5 seconds, using tongs to push it under the hot oil. Remove to paper towels and let drain an cool.

2. Cook ground beef until it looses its color. Season with a little salt and pepper.

3. Pour enough enchilada sauce into a glass baking dish to just coat the bottom.

4. Assemble enchiladas. Put a couple of tablespoons of meat in the center of a tortilla, put a tablespoon of enchilada sauce on the meat, top with some chopped onion and a little cheese. Roll up tightly and place in glass baking dish, seam side down. Continue like this with each enchilada.

5. Pour enchilada sauce over top to coat all surfaces, but, you don't want the enchiladas "swimming" in it. Top with any remaining cheese.

6. Put in a medium-hot oven until well heated. The sauce will bubble and the cheese will be melted.

7. Remove from baking dish with a spatula. Top with a little more fresh chopped onion.

8. Serve with some chopped lettuce and tomato.
