Chicken Adobo (Bon Appetit)

Ingredients:
1/2 cup white wine vinegar
4 garlic cloves, crushed
2 tbs. soy sauce
2 bay leaves
1/2 tsp. ground black pepper
4 boneless chicken breast halves
1/2 pound ripe tomatoes, diced
2 green onions, thinly sliced
1/4 cup water
Freshly cooked rice

Instructions:
1. Combine the white wine vinegar, minced garlic, soy sauce, bay leaves and ground black pepper in a large bowl. Add the chicken breast halves and turn to coat. Cover and marinate in the refrigerator at least 4 hours. Turn occasionally. (Can be prepared up to 1 day in advance.)

2. Combine diced tomatoes and green onions in a small bowl. Season with salt and pepper. (Can be prepared up to 4 hours ahead. Cover and refrigerate.)

3. Transfer chicken mixture to a heavy medium-sized skillet. Add 1/4 cup of water. Simmer over medium heat until chicken is cooked through, turning occasionally, about 12 minutes. Season to taste with salt and pepper. Mound cooked rice on a platter. Arrange the chicken over the rice. Top the chicken with the tomato and onion mixture. Serve, passing the cooking liquid separately as a sauce.
