1 cucumber, thinly sliced Thai pepper or red pepper flakes 1/2 cup rice vinegar Handful of mint leaves 1 tsp. sugar Salt & pepper Salmon filet Sesame seeds |

Instructions:

1. Combine the cucumber, chile, and mint in a mixing bowl. Pour in the vinegar, sprinkle with the sugar, salt, and pepper. Toss everything together so the cucumbers are well coated in the vinegar, the cucumbers will soften and the flavors deepen as it sits. 2. Preheat oven to 350°F. 3. Remove skin from a salmon fillet. 4. Sprinkle one side of the fillet with salt, pepper, and lots of sesame seeds. 5. Preheat an ovenproof skillet. Add a couple of tablespoons of olive oil and heat until it is smoking. 6. Using tongs, set the salmon in the hot skillet seasoned side down. Pan fry for 3-4 minutes until it is crispy. Put the pan in the oven and let the salmon finish cooking (anywhere from 10 to 15 minutes depending upon the thickness of the fillet.) 7. Remove from the pan and serve seasoned side up on top of the cucumber salad. |
