Basil Sauce: 1/4 cup fresh basil, minced 1/4 cup fat-free chicken broth 2 tbs. grated fresh parmesan cheese 4 tsp. extra-virgin olive oil 1/2 tsp. salt 2 garlic cloves, minced or pressed Halibut fillets or cod |

Instructions:

1. Combine basil, broth, cheese, oil, salt and garlic in small bowl. 2. Sprinkle fish with 1/2 tsp salt and 1/2 tsp cracked black pepper. Heat a non-stick skillet coated with cooking spray over medium-high heat. Add fish; sauté 5 minutes on each side or until fish flakes easily when tested with a fork. Serve fish with basil sauce. |
