Grilled Snapper Salad

Although this recipe comes from a Mexican food cookbook, it is distinctly Oriental in taste.

Ingredients:
Soy Marinade for fish:
1 cup soy sauce
1/2 cup sugar
2 tbs. minced ginger
1 tbs. minced garlic

4 red snapper or rockfish fillets, about 6 oz. each (for a salad, for a main dish you might want to increase the size of the portions)

8 oz. of mixed salad lettuces

Vinaigrette:
2 tbs. rice wine vinegar
2 tbs. soy sauce
2 tbs. fresh lemon juice
2 tbs. minced ginger
1 tbs. minced garlic
2 tbs. minced scallions
1/2 tsp. chile caribe (dried red chile flakes)
1/4 cup olive oil

Instructions:
1. Prepare the marinade by combining all ingredients in a saucepan and bringing the mixture to a boil. Remove it from the heat and set the marinade aside to cool before using it.

2. When cool, put the marinade and fish into a bowl and marinade the fish for 15 to 20 minutes at room temperature.

3. While the fish is marinating, prepare the vinaigrette by thoroughly combining all ingredients in a mixing bowl.

4. Remove the fish from the marinade and grill the fillets over medium heat for between 3 and 5 minutes per side.

5. Toss the lettuces with the vinaigrette and place them on serving plates. Put the grilled fish on top.
