This recipe makes 2 loaves. The final bread should be about 2-1/2 to 3 inches tall. If you want a single, larger loaf, make this dough recipe, but put only about 3/4 of it into a single loaf pan. |

Ingredients:

2 cups whole-wheat flour 2 cups all-purpose or white bread flour 2 packages super active yeast 2 tsp. honey 1-1/2 tsp. olive oil 3 tsp. salt 1/4 cup sesame seeds 2-1/4 cups water (must adjust amount, start with 2 cups) |

Instructions:

1. Warm 2 cups of the water. Add yeast and let it set for a few minutes. Dissolve the honey in the water. Add the olive oil. Stir with a whisk and let set until foaming. 2. Meantime, put the flours, salt and sesame seeds in a bowl and mix. (You can use coriander seeds, nuts, or any other appropriate ingredient.) Add the water and knead by hand until soft. (Add more water to get the proper consistency. Should be sticky.) Grease 2 bread molds and divide the dough between them. Cover with a towel and let rise in a warm place until the dough fills the molds. Preheat oven to 400°F while dough is rising. 3. Cook until done, about 30 minutes if you are making two loaves, 35-40 minutes for a single, larger loaf. 4. Serve toasted with butter and honey. Will keep several days when wrapped in a towel or stored in foil. |
