2 beaten eggs 6 kaiser rolls, split 2 tbs. caraway seeds 2 tbs. coarse salt 1 tbs. olive oil 1 tbs. butter 1 cup yellow onion, chopped 4 cups beef broth 1/2 cup dry white wine 2 tbs. garlic, chopped 1 tbs. tomato paste 2 tsp. minced fresh thyme 1-1/2 lb. leftover roast beef, sliced very thinly Prepared horseradish |

Instructions:

1. Brush the tops of the kaiser rolls with beaten eggs. Combine the caraway seeds and salt, then sprinkle on top of the egg wash. Bake in a 375°F oven for 5 minutes. 2. Sautè the onion in oil and butter until golden brown. 3. Add beef broth, white wine, garlic, tomato paste and thyme. Simmer over medium-high heat until reduced by half, about 15 minutes. Strain, then return to pan. 4. Warm the thinly sliced roast beef in the "jus". Arrange slices on the bottom half of a "weck" roll. Dip the underside of the tops of the rolls into the jus and place on top of the beef. 5. Serve with horseradish and a side of hot jus. |
