Gravy for Smothered Chicken

Ingredients:
2 tbs. unsalted butter
2 cups yellow onions, sliced
3 tbs. all-purpose flour
3 cups chicken broth
1/3 cup dry white wine or vermouth
2 tbs. chopped fresh parsley
Salt to taste
Instructions:
1. Prepare Oven-Fried Chicken (recipe elsewhere).

2. When the chicken has 20 minutes to go, melt butter in a large sauté pan over medium heat. Add the sliced onions and cook over low heat until caramelized, about 15-20 minutes.

3. Sprinkle with flour, and stir to cook for 2-3 minutes.

4. Stir broth and wine into the onion mixture. Pour the gravy around the chicken in the baking dish (don't pour right on top of the chicken). Place back in the oven for 15 minutes to thicken the gravy.

5. Remove from oven and transfer the chicken pieces to a serving platter. Add the parsley to the gravy, season with salt.

6. Serve with chicken and cooked white rice.
