1 cup chopped mushrooms 1 cup chopped onions 1 tbs. olive oil 2 tsp. minced garlic 2 tbs. tomato paste 1/2 cup red wine or Madiera Bouquet garni 1-1/2 tbs. arrowroot 1 tbs. butter |

Instructions:

Sautè 1 cup of chopped mushrooms and 1 cup chopped onions in 1 tbs olive oil until caramelized. Add 2 tsp fresh minced garlic and 2 tbs tomato paste and cook until dark - 3 minutes. Deglaze with 1/2 cup red wine or Madiera. Reduce to half. Add a bouquet garni, 1-1/2 cups beef broth, and any other seasonings. Simmer at least 5 minutes or as long as 30 minutes. Strain through cheesecloth. Return to pan and add arrowroot (1-1/2 tbs of arrowroot dissolved in 1 tbs water) as a thickener. Add 1 tbs wine and 1 tbs cold butter for richness and flavor. |
