Hot Coleslaw

Great with barbequed ribs and fried chicken
Ingredients:
1/2 lb. thick-sliced bacon, diced
1 cup yellow onion, diced
1 tbs. all-purpose flour
2/3 cup white wine vinegar
1/3 cup sugar
1/4 cup low-sodium chicken broth
Salt and pepper, to taste
8 cups red cabbage, thinly shredded
1/4 cup chopped fresh parsley
Instructions:
1. Fry bacon in skillet. Pour off all but 1/4 cup drippings.

2. Add onion to bacon and drippings. Cook on medium heat until softened, about 5 minutes.

3. Whisk in flour. Cook 1-2 minutes to remove the starchy taste of the flour.

4. Stir in vinegar, sugar, broth, salt, and pepper to taste.

5. Add the cabbage and toss to wilt, 4-5 minutes

6. Stir in parsley before serving.
