3-4 large russet potatoes, unpeeled 2 tbs. olive oil Salt and pepper Or, use any combination of these seasonings to replace the pepper: Chili seasoning: ½ tsp. sugar ¼ tsp. chili powder ¼ tsp. cayenne ⅛ tsp. paprika Herb seasoning: 1 tbs. fresh thyme leaves, minced 1 tbs. fresh rosemary leaves, minced 1 tbs. fresh oregano leaves, minced Cheese seasoning: ¼ cup finely grated Parmesan cheese |

Instructions:

1. Wash the potatoes, but don't peel them. 2. Cut into fries about ¼ inch thick. 3. Toss with olive oil, salt, pepper (or other seasonings) in a bowl. 4. Arrange the potatoes in a single layer on a sheet pan that has been lightly sprayed with cooking oil. Bake 15-20 minutes at 475°F. on a rack in the lower part of the oven. Flip with a spatula and cook an additional 20 minutes on a rack high in the oven, until golden. Serve immediately. |
