2 lb boiling potatoes 3 tbs butter 3 tbs olive oil Grated peel of 1/2 lemon 2 lg cloves garlic, mashed Pinch of nutmeg Salt and pepper 1 tbs minced fresh basil 2 to 3 tbs minched fresh parsley 2 to 3 tbs butter 1 tbs lemon juice Peel and slice the potatoes into 1/4 inch thick slices. |

Drop potato slices into boiling salted water. Boil 5-6 minutes. Film frying pan with 1/8 inch of melted butter and olive oil. Set over moderately hot heat. When hot but not burning add potatoes to form 1 layer. Toss and turn frequently. Whey they start to brown, add more potatoes, (add more oil if necessary). When all are lightly brown, toss with lemon peel, garlic, nutmeg, salt and pepper. Continue sauteeing until done. Can cook ahead to this point. Just before serving, reheat to sizzle and toss with lemon juice and basil, parsley and butter. |
