2 tbs. bacon grease 1 cup white rice 2 fresh tomatoes 1 medium onion 1 clove garlic 1/2 tsp. salt 2 to 3 cups of meat broth |

Instructions:
|
1. Brown the rice in the bacon grease and set aside. Peel the tomatoes by putting them in boiling water for a couple of minutes. Put tomatoes, coursely chopped onion, coursely chopped garlic, and the salt into a food processor and grind for a minute. Add the tomato mixture to the rice in a pan and add meat broth to cover. Cover and cook slowly until done over low heat and without stirring. Should take about 20 minutes. 2. You can optionally add finely chopped chili peppers, green peppers, etc. |
