2 medium eggplants Kosher salt Marinade: 1/4 cup soy sauce 3 tbs. light brown sugar 2 tbs. olive oil 2 tbs. rice vinegar 1 tsp. dark sesame oil 1 tsp. grated fresh ginger 3 cloves garlic, minced Sesame seeds for garnish |

Instructions:

1. Preheat grill to medium heat. 2. Slice the eggplan into 1/2-inch thick slices. Sprinkle with salt and let stand in a colander set over a bowl or the sink for 20 minutes. Rinse briefly and dry. 3. Meanwhile, whisk together all marinade ingredients in a small bowl and let stand for 10 minutes. 4. Pour marinade over eggplant and let stand for at least 10 minutes or up to overnight in the fridge. 5. Remove eggplant from marinade, reserving marinade. Place eggplant on the grill, cook until eggplant is cooked through and lightly browned on both sides, about 10 to 15 minutes. Remove from grill. 6. Serve with reserved marinade and sprinkle with sesame seeds. |
