Cauliflower with New Mornay Sauce

Ingredients:
1 head cauliflower, cut into large florets
1-1/4 cups milk
3 tbs. all-purpose flour
1/2 cup 1% cottage cheese
1/2 cup shredded Swiss cheese, preferably Gruyere
1/4 tsp. salt
1/4 tsp. freshly ground black pepper or white
3 tbs. freshly grated Parmesan cheese
1-1/2 tbs. unseasoned fine dry bread crumbs

Instructions:
1. Set rack in upper portion of oven; preheat to 375°F. Spray a shallow 2-quart baking dish with nonstick cooking spray. Steam cauliflower until tender, but not soft, 5 to 7 minutes. Refresh under cool water and set aside.

2. In a medium-sized heavy saucepan, scald 1 cup milk over medium heat. In a small bowl, stir together flour and the remaining 1/4 cup cold milk to make a smooth paste. Stir into the hot milk mixture and cook, stirring constantly until thickened, about 3 to 4 minutes. Remove from the heat and whisk in cottage cheese, Swiss cheese, salt and pepper. Transfer sauce to a food processor or blender and puree until smooth.

3. Spread one-third of sauce in prepared baking dish. Arrange cauliflower over it and top with remaining sauce. Sprinkle cauliflower with Parmesan and bread crumbs. (Recipe can be made ahead to this point and stored, covered in the fridge for up to 1 day). Bake for 30 minutes or until golden brown and bubbly.
