Feel free to add some andouille sausage to this! A "real" gumbo uses a dark roux obtained after with some time and effort. This recipe skips that, but gets the flavor from the whole wheat flour. |

2 tbs. extra-virgin olive oil 2 ribs celery, chopped 1/2 small onion, chopped 1/2 green bell pepper, chopped 2 cloves garlic, minced 1-1/2 tbs. whole wheat flour 2 tsp. salt 2/3 cup canned tomatoes 2/3 cup tomato sauce (lowest possible sugar) 1 tbs. Worcestershire sauce 1 cup frozen okra, partially thawed and cut into 1/2" pieces 1 cup coarsely chopped shrimp 1 cup lump crab meat, flaked 1/4 cup hot water 1 tbs. finely chopped parsley |

Instructions:

1. Heat the oil in a 5-quart saucepan over medium-high heat. Add the celery, onion, pepper, and garlic and cook, stirring occasionally, for 10 minutes, or until softened. Stir in the flour and salt and cook until the mixture bubbles. Add the tomatoes, tomato sauce, and Worchestershire sauce. Reduce the heat to low, cover, and simmer for 20 minutes. Add the okra, shrimp, crab meat, water, and parsley and simmer for 20 minutes longer. Serve hot. |
