3 tbs. butter 1 onion, chopped 3 cloves garlic, minced 8 oz. sliced mushrooms 1 lb. firm ripe tomatoes, cored and chopped 1 to 1-1/2 tsp. Asian chili paste (or hot oil with red pepper flakes) 1 cup dry white wine 1 lb. shelled and deveined shrimp, tails removed 1 cup chicken broth 2 green onions, thinly sliced (include tops) 2 tbs. Italian parsley, chopped |

Instructions:

1. In a large frying pan over medium-high heat, melt butter. Add onion, garlic and mushrooms and stir often until lightly browned, 7 to 10 minutes. 2. Stir in tomatoes, chili paste and wine. Bring to a boil over high heat; reduce heat to medium and simmer 5 minutes. 3. Add shrimp and broth; stir often just until shrimp turn pink and are no longer translucent in center, about 2 minutes. Stir in green onions. 4. Ladle into soup bowls, sprinkle with parsley and serve immediately. |
