3 pounds peaches 1/2 cup orange juice 1 1/2-2 cups honey 1 tsp allspice 1 tsp ground cloves |

Instructions:

Preheat oven to 300 Peel the peaches. (You can also plunge them into boiling water for 30 seconds to loosen the skin. ) Remove pits and chop fruit. Combine the chopped peaches and orange juice in a large, heavy stainless steel or enamel pan. Cook over low heat for about 20 minutes, stirring occasionally, until the fruit is reduced to a pulp. Press the peaches through a food mill or puree in a blender of food rprocessor. Pour the puree into a shallow baking dish and bake in the preheated oven for 2 to 3 hours, until the butter is thick, stirring occasionally. Sweeten with honey to taste and add the allspice and cloves. Ladle the hot butter into hot, sterilized jars, leaving 1/4 inch head space. Seal the jars and let cool, undisturbed, for 12 hours. |
