Peanut Butter Ice Box Cookies

We used organic, low sugar peanut butter and these did not work great.

Ingredients:
2 cups all-purpose flour
3/4 tsp. baking soda
1/2 cup butter or margarine at room temperature
1/2 cup chunky peanut butter
1/3 cup granulated sugar
1/3 cup firmly-packed light brown sugar
1/4 cup low-fat (1%) milk
1 tsp. vanilla

Instructions:
1. In a medium-size bowl, combine flour and baking soda. In a large bowl with an electric mixer on medium, cream the butter and peanut butter until well mixed. Add the granulated sugar and brown sugar and beat until light and fluffy, scraping side of bowl often. Add the milk and vanilla, beating well. Using a wooden spoon, stir in flour mixture just until flour disappears.

2. Shape the cookie dough into two 6 inch long rolls. Wrap each roll of dough in plastic wrap. Refrigerate for 4 to 48 hours.

3. Preheat the oven to 375°F. Using a sharp knife cut the rolls of dough into 1/4 inch thick slices. Place the slices 1 inch apart on ungreased baking sheets. Bake for 7 to 8 minutes or until edges are firm and light brown. Remove cookies and cool on wire rack.
