"Mole" (pronounced mow-lay) is a Mexican sauce that combines chilies and chocolate. Chocolate goes well with hot foods, so this is a natural. This is a traditional dish made in a healthy way. |

Ingredients:

2-1/2 pounds chicken breast tenders (slice boneless chicken breasts into 1/2 inch slices) Salt Ground black pepper 1 large onion, chopped fine 1 large green bell pepper, cored, seeded and chopped fine 2 cloves garlic, minced 2 tbs. chili powder (adjust to taste, you may prefer more or less) 1/2 tsp. ground cinnamon 1/2 tsp. ground cloves 1 can (14-1/2 ounces) diced tomatoes 2 tbs. unsweetened natural peanut butter (smooth) 2 tbs. unsweetened cocoa powder (use the best you have) 2 scallions, chopped |

Instructions:

1. Cut the chicken breasts into "tenders", or use store-bought tenders. Sprinkle with salt and pepper. Heat a large nonstick skillet (with a lid) with a little olive oil or olive oil spray over medium-high heat. Add the chicken tenders and cook for about 8 minutes, turning once or twice, until browned on all sides. Chicken does not have to be done at this point. Remove to a bowl or plate. 2. Add the onion, bell pepper, and garlic to the same skillet and cook for a few minutes until the onion is translucent. Stir in the chili powder, cinnamon, and cloves and cook for a minute. Return the chicken to the skillet. Add the tomatoes and their juice, peanut butter, and cocoa powder and bring to a boil. You may need to add up to 1/4 cup or so of water if the tomatoes didn't have much juice. 3. Cover and simmer on low heat for 20 - 25 minutes, stirring occasionally. 4. Serve on heated plates, garnish with scallions. 5. You can serve with tortillas on the side, but the mole is great wrapped up in a tortilla and eaten burrito style. |
