There are three types of balsamic vinegar:

aceto balsamico tradizionale
aceto balsamico commerciale
aceto balsamico

The first is the finest. It comes only in bulb-shaped bottles of 100ml. Use it for a dressing or to flavor berries or ice cream. Just a few drops will do.

The commerciale grade is next in quality. It makes a good substitute and is much less expensive. Simmer a couple of cups of it with some bay and honey and cloves (for vegetables or desserts), rosemary (for meat and poultry), or thyme (for fish), until reduced by 1/2 to 1/4. It should be thick as molasses.

The final grade is what you commonly find in grocery stores and is fine for cooking or salad dressings.
