Marsala is a fortified wine that is used as a recipe ingredient or as a drink. It comes from "dry" to "sweet". You want to use sweet (dolce) for desserts, and "dry" (secco) for cooking. For cooking look for wines labeled "fine", these have been aged for a shorter time and are best for the budget. Considered the vino di meditazione, it is a wine to sip while you meditate. Dry Marsala makes a good aperitif. Buy a variety that has aged for a while such as "superiore" ( at least 4 years of aging) or "vergine" (at least 5 years of aging). Store in a cool, dark, dry place after opening. |
