This is really just a curry ketchup that you can use on anything, but we have it mostly on grilled bratwurst. It reminds us of a "fast food" lunch we'd get in Germany.

Ingredients:
Pork sausage such as bratwurst

2 tbs. canola oil
1 finely chopped yellow onion
2 tbs. curry powder
1 tbs. hot paprika (I use sweet Hungarian paprika and a dash of cayenne, might be great with smoked paprika, though)
2 cups whole peeled tomatoes, crushed
1/2 cup sugar (start with less and add to taste)
1/4 cup red wine vinegar
Salt to taste

Instructions:
1. Heat canola oil in a saucepan over medium heat. Add finely chopped onion and cook until soft, 8-10 minutes. Add curry and paprika and cook for 1 minute. Crush tomatoes with juice into pan. Add sugar and red wine vinegar. Salt to taste. Stir well. Increase heat to high, bringing to a boil. Reduce heat to medium-low and simmer, stirring occasionally, until thickened, about 25 minutes. Puree sauce in a blender until smooth. Strain sauce through a sieve. Serve hot over cooked sausage. Sprinkle with additional curry powder and serve with hard roll.
