Make a double or triple batch and freeze this! Use low fat beef hot dogs to keep in Phase 1.
Ingredients:
1 tsp. extra virgin olive oil
1 small onion, finely chopped
2 garlic cloves, minced
1/2 pound extra-lean ground beef
2 tbs. tomato paste
1 canned chipotle chile in adobo, chopped, pluse 1 tsp. sauce from can
3/4 cup lower-sodium beef broth

Instructions:
In a medium saucepan, heat oil over medium heat. Add onion and garlic; cook, stirring occasionally, until translucent, 4 to 5 minutes. Add beef, increase the heat to high and cook, breaking up meat with a spoon and stirring just until all pink is gone, 2 to 3 mintues more. Reduce the heat to medium and stir in tomoato paste, chile, and adobo sauce. Add broth and bring to a simmer. Reduce the heat to low, cover and cook until meat is cooked through, about 5 mintues.
