This bread tastes more like a pastry than a soda bread. Yummy toasted with butter |

Ingredients:

4 cups sifted flour 3/4 cup sugar 1 tsp. salt 1 1/2 tsp. baking powder 1 tsp. baking soda 1/3 cup butter 1/2 box raisins (I used golden) 2 eggs 1 cup buttermilk |
|
Instructions:
|
Mix together first five ingredients (flour through baking soda). Cut in the 1/3 cup butter. Stir in the raisins. Mix the 2 eggs and cup of buttermilk together and add to flour mixture. Knead until well combined and shape into 1 or 2 round balls. Bake at 375 F on sprayed, foiled baking sheet for about one hour. Check for doneness with a toothpick. Cool on wire rack. Note: start with a scant cup of buttermilk at first and make sure the dough isn't too wet. If needed, add more as you go. |
