Fish Tacos

Ingredients:
Salsa:

1 ripe yet firm mango, peeled, diced
1/2 cup grape tomatoes, halved
1/2 cup cucumber, diced
1/4 cup red onion, minced
1tbs. jalapeño, minced
1 tsp. sugar
1/4 tsp. cumin
Juice of one lime
1 firm yet ripe avocado, pitted peeled, thinly sliced
2 tbs. coursely chopped fresh cilantro

Chipotle Sauce

1/4 cup plain lowfat yogurt
1/4 cup reduced-calorie mayonnaise
2 tsp. sugar
1-2 chipotle chiles in adobo sauce, minced
Juice of 1/2 lime

4 4-oz. fresh tilapia fillets, halved
Lime juice for marinade (2 limes)

3 tbs. all-purpose flour
3 tbs. yellow cornmeal
1 tsp. chili powder (heat to taste)
1 tsp. kosher salt
1/4 tsp. cayenne

8 7-inch corn tortillas
Oil spray

3 cups shredded Napa cabbage

Instructions:
1. Preheat oven to 500°F with racks on the top and bottom levels.

2. First make the salsa and sauce. Combine mango, tomatoes, cucumber, onion, jalapeño, seasonings, and lime juice in a large bowl. Let stand for at least 10 minutes, stir to combine occasionally. Just before serving, add the avocado and cilantro. (We found this to be quite hot with the amount of jalapeño called for. Since peppers, and taste, vary, you might want to start with less and add more to get to the level of spiciness you want.)

3. Stir all ingredients for the creamy chipotle sauce together in a bowl and adjust seasonings to taste. Allow to stand at least 10 minutes to combine flavors.

4. Marinate tilapia fillets in lime juice for 10 minutes, turning to coat. Place a baking sheet on each oven rack to preheat.

5. Blend flour, cornmeal, and seasonings in a shallow dish. Coat the marinated fish on both sides with the flour mixture shaking off any excess. Remove the top baking sheet from the oven and spray with non-stick spray. Place the fish on the baking sheet and return to the top rack of the oven. Set the timer for 5 minutes -- you will need to gently turn the fish.

6. Spray both sides of the tortillas lightly with non-stick spray. After gently turning the fish, place the tortillas on the lower baking sheet and return to the oven for 1-1/2 to 2 minutes to warm and begin to crisp at the edges.

7. Serve the fish tacos by placing a fish filet in a tortilla. Top with salsa, cabbage and sauce, fold over.
