4 nice serving-sized salmon filets, skinned Glaze: 1/2-cup jalapeno jelly 2 cloves garlic, minced 2 scallions, rough cut 1/-2 cup cilantro 1 tsp. lime zest 2 tbs. butter |

Instructions:

1. Process glaze ingredients in a food processor. Pour into a pan and over medium heat, allow to simmer a few minutes. Reserve 1/4-cup. Add 2 tablespoons butter to remaining glaze for a sauce. 2. Skin the salmon, sprinkle with some salt and pepper. Dab both sides with some of the reserved 1/4-cup of sauce. 3. Make a "tray" with a sheet of heavy-duty aluminum foil for each fillet and spray with Pam. Place the salmon in a tray, presentation side down. 4. Put on hot grill and cook for 7-8 minutes, then gently turn with tongs. Dab about 1/2 of remaining glaze (the part with the butter) on each salmon fillet. When done, 2-3 minutes later (center just translucent), remove to plates. and dab with the remaining glaze. |
