4 slices of thick-sliced bacon, fried and diced 3/4 cup red bell pepper, diced 1/2 cup onion, diced 1/4 cup dry sherry 4 cups fresh corn kernels 1 cup heavy cream 1 tsp. Tabasco Salt & freshly ground black pepper to taste 1/2 cup scallions, thinly sliced |

Instructions:

1. Sauté diced bacon in a large sauté pan over medium heat until crisp. Pour out all but one tablespoon of the drippings. 2. Add diced bell pepper and onion and cook until soft, about 5 minutes. 3. Deglaze with the sherry until nearly evaporated, scraping up the bit on the bottom of the pan. 4. Stir in the corn, cream and Tabasco, and simmer until thickened, 3-4 minutes. Season with salt and pepper, then stir in scallions. |
