Kofta Gyros

Sauce:

1/4 cup Greek-style or plain yogurt
1/4 cup feta cheese, crumbled
2 tsp. fresh lemon juice
2 tsp. olive oil
1/2 tsp. dried oregano leaves
Salt and freshly ground black pepper to taste

Salsa:

1/4 cup tomato, diced
1/4 cup cucumber, seeded, diced
2 tbs. red onion, diced
Juice of 1/2 lemon
Salt and freshly ground black pepper to taste

Lamb:

1/2 lb. lamb stew meat, trimmed, cubed (or 1/2 lb. ground lamb)
1/4 cup onion, chopped
1/4 cup chopped fresh parsley
1 garlic clove, chopped
1/4 cup panko crumbs
Salt and cayenne pepper

4 pita rounds, warmed
1 cup iceberg lettuce, shredded

Instructions:
1. Make the sauce and salsa: stir all sauce ingredients together in a bowl. Combine all salsa ingredients in a separate bowl. Chill both until ready to serve.

2. Grind lamb with onion, parsley and garlic in a food processor until minced. Transfer to a bowl and mix in panko and seasonings. (If using ground lamb, mince onion, parsley and garlic in a processor, then blend into meat with panko and seasonings.)

3. Shape meat into cylinders about 4" long and 1-1/2" in diameter, then mold onto skewers (optional).

4. Prepare a barbeque grill to medium-high heat. Coat the grill with oil or nonstick spray.

5. Grill the kofta, turning occasionally, until cooked through, about 8-10 minutes.

6. Warm pitas on the grill during the last few minutes of cooking.

7. Assemble gyros on pitas with lettuce, lamb, sauce and salsa.
