Ingredients:

1/2 cup olive oil, plus 1 tbs. for greasing the pan 2 heads of cauliflower, trimmed into florets (about 12 cups of florets) 2 tsp. kosher salt 1/2 cup drained capers 1-1/2 tsp. red pepper flakes 1/2 cup finely grated Parmesan cheese |

Instructions:

1. Preheat oven to 450°F. Grease a roasting pan with the 1 tablespoon olive oil and set aside. 2. Place the cauliflower florets in a large bowl and toss with the 1/2 cup of olive oil and the salt. Transfer to the roasting pan and roast until deep golden brown, 25 to 35 minutes, stirring several times during cooking. Get it nice and toasted! 3. Remove the cauliflower from the oven and sprinkle with the capers and red pepper flakes, tossing together to combine. Transfer to a serving dish and sprinkle with cheese. Serve. NOTE: We add the cheese while it's still in the roasting pan to save on cleanup! |
