2 T fresh lime juice 1 tsp. Dijon honey mustard 1/2 tsp. ground cumin 1/4 tsp. salt 1/4 tsp. freshly ground pepper Dash of chili powder 2 1/2 T canola oil 6 cups chopped romaine lettuce 1 cup multicolored cherry tomatoes, quartered 1/3 cup no-salt-added black beans, rinsed and drained 1/4 cup (1 ounce) reduced fat sharp Cheddar cheese 1/3 cup crushed baked blue corn tortilla chips (about 9) |

Instructions:

1. Combine first 6 ingredients in a small bowl. Add oil; stir with whisk. 2. Combine lettuce and net 3 ingredients in a large bowl; toss gently. Drizzle with vinaigrette; toss to coat. Divide salad among 6 plates; sprinkle each serving with tortilla chips. Serve immediately. Serving size: 1 1/2 cups Per serving: Cal 108. Fat 7.8g carb 7.5 g |
