We created this recipe when Lynne bought some fresh Gulf shrimp and we wanted to cook them in the simplest possible way to extract the most flavor. |

1 lb of fresh Gulf shrimp, as large as you can get Olive oil Kosher salt Freshly ground black pepper 1 garlic clove, minced Red pepper flakes 1 tsp. fresh oregano, chopped fine Italian loaf bread, cut into large chunks Skewers Salad or couscous |

Instructions:

1. Shell and clean the shrimp. 2. Put the shrimp in a glass bowl. Pour enough olive oil in the bowl to coat the shrimp when tossed -- about 1/4 cup or less. Add salt and pepper to taste. Add chopped oregano and a few red pepper flakes. Toss to coat, cover with plastic wrap and put in the fridge to marinate while you build a charcoal fire or fire up the gas grill. 3. When the grill is ready, put the shrimp on skewers alternating one shrimp with a chunk of the bread. 4. Grill over a medium fire until done. 5. Serve with a salad or over couscous. |
