Skillet Lasagne

Ingredients:
1 pound meatloaf mix (1/3 hamburger; 1/3 ground veal; 1/3 ground pork) or use 1/2 ground beef/ 1/2 ground pork

2 cloves garlic, minced
1/4 tsp. red pepper flakes
salt
freshly ground pepper
6 oz. curly edge lasagne noodles (8 noodles broken into 2-inch pieces)
1 26 oz. jar tomato (spaghetti) sauce such as marinara
2 cups water
1/2 cups mozzarella cheese, shredded
1/4 cup Parmesan cheese, shredded
(or use 3/4 cup italian cheese blend)
3/4 cup part-skim ricotta cheese
1/4 cup minced fresh basil

Instructions:
1. Brown meat in a non-stick skillet large enough to hold the completed dish.

2. Stir in garlic, red pepper flakes and 1/2 tsp salt.

3. Sprinkle broken noodles over the top of the meat. Pour tomato sauce and water over the top of the meat and noodles.

4. Cover and cook about 20 minutes or until noodles are al dente, stirring often at a vigorous simmer. Keep lid on!

5. Take skillet off heat and add half of the cheese mixture. (3/4 cup) Add salt and pepper to taste.

6. Dot tablespoons of ricotta cheese over the noodles; sprinkle on rest of cheese mix. Cover, off heat, until cheese melts.

7. Spoon into dishes and top with basil.
