12 garlic cloves 2 tbs. olive oil 1 tbs. cider vinegar White pepper Salt 2 cups heavy cream |

Instructions:
|
1. Toss garlic cloves in olive oil then place in a foil pouch and roast at 350°F for 20-30 minutes. 2. Place peeled cloves in a medium saucepan with cider vinegar and bring to a simmer while mashing the cloves with the back of a spoon. A paste will form when the liquid evaporates. 3. Add the heavy cream and simmer for about 10 minutes on low heat to blend flavors. Salt and pepper to taste. 4. Sauté the scallops. Drizzle garlic sauce over them. |
