Chicken Thighs in Balsamic Sauce

Ingredients:
12 chicken thighs, skin on
1/4 cup olive oil
1/2 pound crimini mushrooms, quartered
2 tbs. tomato paste
2 cups balsamic vinegar (cooking quality)
Freshly ground black pepper
Course sea salt
Sweet butter
Parsley, chopped

Instructions:
1. Debone the thighs if necessary and season with salt and pepper

2. Heat olive oil in large sauté pan until smoking hot. Place thighs in pan and cook until skin is nicely browner. Do this in batches to avoid crowding, if necessary.

3. When chicken is browned, drain some fat then add quartered mushrooms cut side down. After about a minute, add tomato paste. Stir in and caramelize some. Add any reserved chicken back to the pan.

4. Pour vinegar into pan and stir everything together. Reduce some and then stir in a couple of nuggets of butter.

5. Remove chicken to a serving platter or plates. Add parsley to sauce, stir to combine. Serve over chicken.
