Lynne has a fig tree. In 2012, it yielded a huge amount of figs and we used some of them for this recipe. We actually used untested bread then grilled these for a few seconds in a tiny bit of butter. Delicious! |

You can substitute Pecorino Romano for the Manchego. Use artisan bread and the best prosciutto you can find. |

4 tsp. Dijon mustard 8 slices of Italian bread, toasted 1 cup baby arugula 2 oz. very thin slices prosciutto 2 oz. Manchego cheese, shaved 8 fresh figs, cut into thin slices 2 tbs. fig jam |

Instructions:

1. Spread 1 teaspoon mustard over 4 bread slices. Arrange 1/4 cup arugula over each bread slice. Divide prosciutto evenly over bread slices (2 per slice is about right); top evenly with cheese and fig slices. Spread 1-1/2 teaspoons jam over the remaining bread slices. Top each serving with that bread slice, jam side down. |
