There seems to be some controversy over what is authentic hull-huli chicken. I'd like to try this recipe. It is supposedly a recreation of the original Ernie Morgado recipe. I've seen pineapple chunks added to this.
Serving Suggestions:
This is enough for about 3 chickens. You can marinate the whole chicken and grill it in halves, or cut into pieces.
Ingredients:
Marinade:

1/3 cup ketchup
1/3 cup soy sauce
1/4 cup brown sugar
1/4 cup honey
1/4 cup sherry
1-2 Tbsp. sesame oil
1-2-more pieces ginger root, crushed
3 cloves garlic, crushed
Worchestershire sauce to taste
Sriracha or Asian chili paste (or red pepper flakes) to taste
Squeeze a lemon in if you've got one

Instructions:
1. Make the marinade by combining all ingredients. Pour over chicken and marinate for at least one half-hour.

2. Grill the chicken using the marinade as a baste. "Huli-huli" means "turn-turn" in Hawai'ian, so be sure to turn often to prevent burning.
