2 Russet potatoes 1 tbs. olive oil Sprinkle of corn starch Kosher salt Freshly ground black pepper Dash cayenne Sea salt |

Instructions:

1. Preheat oven to 400°F. 2. Wash potatoes and cut into French fry size pieces. Let soak in cool water for 15 minutes. Remove, drain and dry well. 3. In a large bowl combine potatoes and oil and toss to coat. Sprinkle a little corn starch on the potatoes and toss (about 1 tsp per potato.) Add the salt, pepper and a dash of cayenne and toss to coat. 4. Spray a sheet tray with oil spray. Spread potatoes on the sheet tray so they are not touching. 5. Bake in top 1/3 of oven for 20 minutes without disturbing. Using tongs turn each fry over. Repeat every 10 minutes until the total cooking time is 50 minutes. 6. Remove from the oven and sprinkle with some sea salt. Serve hot. |
