When Rick was growing up his aunt Nonie made a wonderful home-made chocolate cake with fudge frosting. The fudge hardened on the cake. This is as close as we've come to duplicating that recipe. |

2-1/4 cups sifted all-purpose flour 1 tsp. baking powder 1 cup boiling water 1/2 cup (1 stick) butter 3 squares unsweetened chocolate 2 cups sugar 1 tsp. vanilla 2 eggs, separated 1/2 cup sour cream 1 tsp. baking soda Chocolate Frosting, recipe follows: FROSTING 3/4 cup semisweet chocolate pieces 6 tbs. heavy cream 2 tbs. butter 1 tsp. vanilla 1 1/4 cups confectioners' sugar |

Instructions:

1. Preheat oven to 350°F. Grease bottom and side of a 10-inch springform pan; dust lightly with flour; tap out any excess. 2. Sift flour and baking powder onto wax paper. Pour boiling water over butter and chocolate in a large bowl; let stand 5 minutes until melted; stir to blend. Stir in sugar and vanilla. Beat in egg yolks, one at a time, belnding thoroughly. 3. Combine sour cream and baking soda in a bowl; beat into chocolate mixture. Stir in flour mixture, blending thoroughly. 4. Beat egg whites in a small bowl with electirc mixer until soft peaks from. Stir a little of the beaten egg whtes into batter to lighten. Fold remaining ege whites into chocolate mixture until no streaks of white remain. Pour into prepared pan. 5. Bake at 350°F for 45 minutes or until a small knife inserted into the center comes out clean. Cool cake in pan on wire rack 10 minutes; loosen spring from side and remove side of pan; cool cake completely. Frost with Chocolate Frosting, let set before serving. Chocolate Frosting: 1. Combine chocolate, heavy cream, butter, vanilla and sugar in a medium-sized saucepan. 2. Heat slowly, stirring constantly until butter and chocolate have melted. Remove from heat; beat until mixture thickens slightly, but is still runny. Cool slightly. Frost the cake. (Frosting will be soft and runny but will set up on the cake) |
