Any meat or any combination of meats. Try to pick a cut with some fat: chuck roast, turkey thighs, pork butt, short ribs, or even firm fish such as tuna, salmon or swordfish. Here are some ideas: Chicken, garlic and chive meatballs. Salmon, caper and parsley burgers. Pork and apple sausages. Tuna burgers (see instructions). Spicy turkey burgers (see instructions). |

General instructions: 1. Pick a protein and seasonings. Cut the protein into 1" cubes. Put in freezer for 15 minutes to get it very cold and firm, but not frozen. Put all the parts of your grinder in the fridge to cool. 2. If using whole spices, toast them in a pan for a few minutes and then grind. 3. Toss the cold meat with the seasonings and grind. I use a KitchenAid stand mixer with grinder attachment. Put on medium speed. Tuna Burgers: Chill 1-1/4 pound of 1" bigeye or albacore tuna for 15 minutes in the freezer. Combine tuna cubes, 1/4 cup minced scallions, 1 heaping tablespoon of finely grated ginger, and 2 teaspoons finely grated garlic in a large bowl. Grind mixture. Add 2 tablespoons mayonnaise, 4 tsp grapeseed or canola oil and 1 teaspoon toasted sesame oil to ground tuna mixture. Mix gently. Form four 1/2" thick patties and pan fry or gill until just cooked through, about 3-4 minutes per side. Spicy Turkey Burgers: Cut meat from 2 pound bone-in, skin-on turkey thighs (about two of them) into 1" cubes. Discard bones and skin. Chill cubes in freezer for 15 minutes. Transfer chilled turkey to a bowl. Mix in 1/2 cup minced onion, 1/4 cup chopped cilantro, 2 minced garlic cloves, 2 teaspoons chopped jalapeƱo or serrano chile with seeds, 1 teaspoon ground coriander, 1 teaspoon ground cumin, 1 teaspoon paprika, and 1/2 teaspoon freshly ground black pepper. Grind mixture. Form into 1/2"-thick patties. Season with kosher salt and freshly ground black pepper. Grill burgers over medium heat until cooked through, 5-7 minutes per side. |
