5 cups thinly sliced peeled peaches (about 2-1/2 lbs) 1/2 cup sugar 1/3 cup orange marmalade 3 tbs. orange juice 5 soft oatmeal cooking such as Archway Homestyle 1 slice of white bread 2 tbs. butter, melted cooking spray |

Instructions:

1. Preheat oven to 350°F. 2. Combine first 4 ingredients in a large bowl. 3. Place the cookies and bread in a food processor. Pulse 10 times or until coarse crumbs form to measure 1-1/2 cups. 4. Combine cookie crumb mixture and butter, toss well. 5. Sprinkle 1/2 cup crumb mixture in bottom of 2 qt casserole coated with cooking spray. Add peach mixture. Sprinkle with remaining crumb mixture. 6. Cover and bake at 350°F for 25 minutes. Uncover and bake for 15 minutes more or until bubbly. |
