4-5 slices thick sliced bacon, cut into pieces 2 medium to large red potatoes, cut into 1/4" chunks 1 ear of corn, kernels cut off Kosher salt and freshly ground black pepper A few red pepper flakes, optional 2 scallions, sliced 2 eggs, cooked to your desire to top the hash |

Instructions:

1. Put the bacon in a frying pan and turn on the heat. Cook gently, rendering the fat and getting the bacon crisp. Remove the bacon to paper towels to drain reserving the fat. 2. Increase the temperature some and add the potatoes in a single layer. Cook, stirring occasionally until browned nicely, 15 to 20 minutes. Spoon out any bacon fat and save for cooking the egg. 3. Add the corn and stir to combine. Sprinkle with salt and pepper. And, red pepper flakes if desired. Corn will likely pop some. Cook until it starts to brown. 4. Add the bacon back into the hash and stir to heat. Sprinkle with some of the scallions. 5. Cook an egg if desired for the top of the hash. 6. Spoon the hash onto a plate. Top with the egg, if you want. Sprinkle with some more of the scallions. |
