10 oz. shaved Brussels sprouts 2 leeks (or half a small onion), sliced 1 tbs. olive oil 1 tsp. minced garlic 3/4 cup shredded Gruyere cheese 1/2 cup shredded cheddar cheese 1 tbs. butter 1 cup milk 1 tsp. Dijon mustard Salt and pepper to taste Breadcrumbs |

Instructions:

(If you can't find shaved sprouts, do them yourself with a coarse grater) Sauté Brussels sprouts and leeks with garlic and olive oil until bright green, but not soggy. Transfer to a large bowl. In a separate pot, combine Gruyere, cheddar, milk, butter, mustard, salt, and pepper. Cook on medium heat and stir until cheese is completely melted. Then, pour cheese sauce onto Brussels sprouts + leeks and mix well. Pour cheesy Brussels sprouts + leeks into a small baking pan. Top with breadcrumbs. Bake on 400 degrees F for 20 minutes until top starts to lightly brown. Allow to cool for 5 minutes before serving. |
