12 oz. fingerling potatoes, cleaned 1 tsp. freshly grated lemon zest 1 tsp. flaky sea salt 5 chives, finely chopped 1 tbs. olive oil |

Instructions:

1. Cover potatoes with cold water in a medium pot, add 1/2 tsp salt (not the flaky sea salt), and bring to a boil over high heat. Reduce heat to a simmer and cook until the potatoes are tender, between 10 to 15 minutes. Drain the potatoes and when cool enough to handle, slice into thin coins. 2. While potatoes are cooking, in a medium bowl, combine the lemon zest and sea salt. Using your fingers, mix thoroughtly. 3. Add the potato coins, 1 tablespoon of olive oil and the chives. Toss to combine. |
