1/2 seedless baby watermelon, cut into 1" cubes 1tbs. roughly chopped fresh mint 3 tbs. tequila blanco 2 tbs. agave syrup 1 tbs. lime juice Kosher salt Lime wedges |

Instructions:

1. Purée the watermelon cubes in a food processor or blender until smooth, about 10 to 15 seconds. Strain in sieve over a medium bowl. Don't press through, just let the watermelon water drain. Put remaining purée in a large liquid measuring cup (with a pouring spout) and pick out any seeds. 2. Pour 1 cup of strained watermelon juice into a small bowl, reserving the rest for another use, and add the mint. Allow to steep for 10 minutes, then strain into the purée. Discard the mint. 3. Stir in tequila, agave syrup and lime juice, combine well. Pour into pop molds and freeze until solid, at least 4 hours. 4. To serve, unmold, optionally sprinkle with a little salt and serve with a slice of lime. |
