1/4 pound dried soba noodles 1 tbs. creamy peanut butter 1 tbs. lower-sodium soy sauce 2 tsp. dark sesame oil 2 tsp. seasoned rice vinegar 1/8 tsp. crushed red pepper 1/2 small garlic clove, minced 1 1/2 cups shredded cooked chicken breast 1/3 cup julienne-cut pickling cucumber 1/3 cup thinly sliced red bell pepper 1/4 cup matchstick-cut carrots 2 tbs. sliced green onions 2 tbs. chopped peanuts Cilantro leaves (optional) |

Instructions:

Cook soba noodles according to package directions, omitting salt and fat. While noodles cook, combine peanut butter and next 5 ingredients in a small bowl, stirring with a whisk until smooth. Drain noodles, and rinse under cold, running water. Drain. Combine noodles, chicken and next 4 ingredients in a medium bowl. Drizzle with peanut butter sauce; toss gently to coat. Sprinkle with peanuts, and garnish with fresh cilantro if using. Serve immediately, or cover and chill. |
