Rick's Mexican-Style Ceviche

You can try many kinds of fresh seafood including yellowtail, hamachi, etc. Try adding a little pineapple!

Serve with corn tortilla chips
Ingredients:
2 or 3 fresh medium shrimp per person, shelled and cleaned
1 or 2 fresh sea scallops per person, quartered
1 fresh squid per every two people, cleaned
Substitute or add other fresh seafood as desired
Lime (or lemon) juice to cover seafood in non-reactive bowl
Kosher salt

Red bell pepper (or yellow or orange), medium dice
Serrano chile (or jalapeƱo for milder flavor), finely chopped
Plum tomatoes, about 1 per person, peeled seeded and medium dice
Avocado, about one for every 2 people, medium dice
Red onion (about 1/4 per person), diced
Clove of garlic, chopped (one clove per 2 people)
Pinch ground cumin
Cilantro, chopped
Freshly ground black pepper.

Instructions:
1. Prepare the squid, if using, by cleaning it and then placing it in boiling water for 1 minute. Remove, drain and slice into rings.

2. A couple of hours before serving, prepare the fresh seafood and place in a non-reactive bowl or plastic container with the prepared squid. Add fresh lime juice to just cover the seafood. Add a couple of pinches of salt and stir gently to combine. Store, covered, in the refrigerator for at least a couple of hours. Stir occasionally.

3. Prepare all the other ingredients except the cilantro and combine in a bowl to make a salsa. Add a little lime or lemon juice to keep the avocado from turning color. Add a little Bloody Mary mix and/or clam juice if you want. Taste and adjust seasoning.

4. When ready to serve, drain the seafood, reserving the marinade. Combine with the salsa and stir gently. If you need a bit more liquid, add some of the marinade. Gently stir in chopped cilantro.

Variations:

Can also use Bloody Mary mix and/or clam juice to flavor the veggies.

I've seen radishes, cucumber and pineapple used in the salsa, too.

You can make a cooked version with cooked shrimp and imitation crabmeat. In this case, use the Bloody Mary mix with a little clam juice.
