This made so much we ended up using the filling in tacos as a leftover meal. |

6 green peppers (short and fat ones work best) 1 lb ground turkey taco seasoning 1/2 onion 1 can Rotel 1 can fiesta corn 1 can kidney beans 1 1/2 c brown rice (already cooked) shredded cheese |

Instructions:

Cut the tops off of 4 green peppers and scrape out all the seeds. Place peppers in boiling water for 3-4 minutes. Remove and place directly into cold water to stop the cooking. Meanwhile, put onions, turkey and 1 Tbsp taco seasoning into a large pan. Saute until turkey is cooked and onions are soft. Drain turkey mixture and return to pan. Add corn, tomatoes, beans, 1 Tbsp taco seasoning and brown rice. Mix while heating. Place the peppers in an oven safe dish and stuff them with turkey mixture. Top with shredded cheese. Bake at 350 degrees for 12-15 minutes. Remove, top with toppings of choice (sour cream, plain Greek yogurt, salsa, hot sauce, etc) and enjoy |
