1 whole lemon, washed 8 cups vodka 2 cups grain alcohol like Everclear Use a ~4:1 ratio of vodka to grain alcohol For 8 cups of raw limoncello, use 3 cups of water and 1.5 cups of sugar for the simple syrup |

Instructions:

1. Wrap the washed lemon in cheesecloth and tie with a string. Hang by string over the vodka and grain alcohol mixed in a glass jar. The lemon should not touch the liquid, but hang above it. Be sure the jar is sealed. (I use cling wrap strung tightly around the seal of the jar and lid to ensure this.) 2. Put in a cool, dark place for at least 1 month, but not more than about 5 or 6 weeks. 3. Remove the lemon from the cheesecloth, cut it in half and squeeze the juice into the alcohol mixture. 4. Make a simple syrup and stir into the alcohol. Reseal the jar and let stand at least a week. 5. Stir and pour into bottles with tight caps. 6. Serve very cold. |
